Cooking with Girl Scout Cookies: Chocolate Samoa Cupcakes

Chocolate cupcakes-

2cups white sugar 1 3/4 cups all-purpose flour 1 cup unsweetened cocoa powder 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoon 2 eggs 1 cup milk 1/2 cup vegetable oil (or applesauce) 2 teaspoons vanilla extract 1 cup boiling water 1 1/2 boxes of samoas

1.) Preheat oven to 350F 2.) Mix the sugar, flour, cocoa powder, baking powder, baking soda, and salt together. Then add the eggs, milk, vegetable oil, vanilla, and water, mix for 2 minutes. 3.) Spray the cupcake pan, I had to use 2, and I still had extra batter 4.) Put just enough batter in the bottom of the cupcake pan to cover the bottom. Then press a cookie into the batter. 5.) Finish covering the cookies, each cupcakes spot should be about 3/4 full. 6.) Put the cupcakes in the oven, and bake for 30 minutes.

Frosting-

I used caramel frosting, but when I make these again, I’m going to use vanilla frosting.

Then toast some coconut and sprinkle it on top. Cut one of the samoas into quarters, and put it on the top.
