Katie Ellenberger’s Silver Award project started because she recently got braces and noticed the fruits that are served at school lunch were hard and could not be consumed by a student with braces. This inspired Katie to contact the manager of the school’s nutrition department to request fruit and vegetables be offered that are braces friendly at all meals served by the school. This request was accepted and for the duration of the school year, braces friendly fruits and vegetables were available for all.
However, she did not stop there. She also contacted the Colorado Office of Nutrition, the Department of Agriculture, and First Lady Michelle Obama. Katie’s mission was to help all students with braces be able to eat all contents of a nutritious meal.
